Matcha Ice Cream

Summer and ice cream is a matcha made in heaven…and just when you thought it couldn’t get any better, we added tea! Get yourself out of a hot afternoon lull with this delicious matcha ice cream. It’s dairy-free AND packs the matcha caffeine punch you’re looking for. Even better, it can be made in the comfort of your own home. Bonus: matcha is loaded with antioxidants so you don’t have to feel bad about enjoying this sweet summertime treat!

  

Ingredients

This recipe makes 1 serving.

  • 1tbsp Matcha - Shop Matcha Now
  • 1 cup coconut milk
  • 1 tbsp honey
  • 1 tbsp hot water

You'll also need

To make by hand:

  • Small cup
  • Spoon
  • Mesh Strainer or sifter
  • 1 quart sized zip-top bag
  • 1 gallon sized zip-top bag
  • 1/2 cup rock salt
  • 5 cups of ice
  • Gloves, oven mitts, or a towel (optional)
  • Ice cream scoop
  • Ice cream bowl (for serving!)

To make with an Automatic Ice Cream Maker:

  • Automatic Ice cream maker with pre-frozen freezer bowl (we used this Cuisinart Ice Cream & Sorbet Maker)
  • Small cup
  • Mixing bowl
  • Mesh Strainer or sifter
  • Spatula or spoon
  • Ice cream scoop
  • Ice cream bowl (for serving!)

Instructions

To make by hand:

  • In the small cup, make a honey simple syrup by mixing the honey and hot water together with your spoon. (This is to make sure the honey does not freeze and harden.)
  • Open the quart bag and pour in the coconut milk.
  • Pour the Matcha into the mesh strainer or sifter and sift the Matcha into the quart bag. 
  • Pour the honey simple syrup into the quart bag and then carefully push all the air out of the bag and seal.
  • Place the quart sized bag into the gallon bag.
  • Pour the rock salt and 5 cups of ice into the gallon bag, push out the air, and seal the bag.
  • Put on your oven mitts or wrap the towel around the bag (if you are sensitive to the cold) and begin shaking until the Matcha becomes thicker. This will take about 5 minutes of shaking.
  • Once the ice cream is a smooth consistency, creamy and almost frozen solid, take the quart bag out of the gallon bag.
  • Use the ice cream scoop to serve up the Matcha ice cream from the quart bag into your ice cream bowl and enjoy!

  • In the small cup, make a honey simple syrup by mixing the honey and hot water together with your spoon. (This is to make sure the honey does not freeze and harden.) Set aside.
  • Pour the coconut milk into your mixing bowl.
  • Using your mesh strainer or sifter, sift the Matcha into the mixing bowl and stir together with the coconut milk. If not using a mesh strainer or sifter, add the Matcha into the mixing bowl and stir to combine with the coconut milk.
  • Stir the honey simple syrup in to the Matcha and coconut mixture. Don't worry if the Matcha clumps up in the process, it will mix together in the ice cream maker.
  • Turn your automatic ice cream maker on, and pour your ingredients into the freezer bowl. Let mix until thickened, about 15 to 20 minutes.
  • Use the ice cream scoop to serve up some delicious Matcha ice cream into your ice cream bowl and enjoy!
